“We wanted to do something different and give our customers the opportunity to experience different types of biryani and flavours from across the region,” the Sheraton Colombo executive chef explained.
“Over the 10 days, we will rotate five varieties, including Lucknow, Hyderabadi, Mumbai, Donne from Karnataka and Delhi biryani.”
The chef’s vision goes beyond menu planning, serving as a strategic nod to regional unity through food.
“With the Independence Day celebrations of our neighbours, Pakistan and India, also falling during this period, we thought it was a good opportunity to bring some of those traditional flavours together here in Colombo,” he added.
This brings a thoughtful, timely layer to the entire experience, making it a culinary celebration of shared regional heritage.
The tasting session on a recent Friday proved that the execution easily matches the ambition. The flavours are deep, authentic and crafted with obvious expertise.
